A delicious easy way to prepare salmon with things from your garden and notes about a favorite play, Street Car Named Desire with colorful French Quarter pix.

Hola! I'm Rosalita Margarita de Malabar and I live in zesty New Orleans, Louisiana. Some things I enjoy are classic movies, cooking and gardening. I learned many of my culinary skills from friends in the restaurant biz here. I like to bring you a few of my simple recipes with local flavor and occasionally mini reviews of movies that have New Orleans connections. There have been so many shot here or with New Orleans a central part, some really bad and some good ones too, but all interesting to me. I even have a claim to fame for being an extra in one or two! :) But more about that later... You can rent them locally or even purchase the movies online here from Amazon.com. Browse my Book Store.Movie: This week, I want to talk about A Streetcar Named Desire (1951) because it is one of my all-time favorites. The film, starring Marlon Brando and Vivien Leigh, is so perfectly cast by one of the best directors of all time, Elia Kazan. Brando had already starred in the play on Broadway. Vivien was established as an actress from Gone With the Wind and as frail as Blanche mentally, having had breakdowns and the shock treatments so popular in that era. Karl Malden and Kim Hunter are brilliant in supporting roles.

The building where the play was written is right behind this flower on St. Peter St.
Tennessee Williams wrote this play right across the street from where I was to live for many years. Gave me goose bumps when I'd look across the way at the building and think he looked out at the same streets and old buildings I'd see. Today, tourists frequently yell "STELLA!" in front of that house and we have a yearly Festival each spring honoring the famous playwright. Tennessee was so talented and ahead of his time. When Blanche says to Mitch, "I'm not properly dressed." and he replies, "That don't make much difference in the Quarter" it is so today as well as yesterday and speaks volumes about "The City that Care Forgot" or "The Big Easy." He had a knack for making use of names and metaphors. Elysian Fields, a place of Angels is a real street here and the streetcar named Desire, used to run on Desire and Royal St. I can show you a picture of it too as it is parked down by the old US mint on Esplanade. It used to pass by my house on Royal Street before they took it down in the 60's. I can imagine Tennessee looking out his window from his typewriter and being so inspired by the clanging of that streetcar. I recommend this movie as a great classic that sticks pretty true to the original script and a timeless romantic tragedy.

And as pink and green are the French Quarter colors to me, as seen in the stucco, brick and shutters and the pink sunset skies, I think the colors of this recipe goes well. It is very easy and simply elegant and nutritious too!

Recipe: SALMON ROSA BASIL DESIRE
You can make this as simple or elaborate as you like by varying ingredients you happen to have available and what you like!
--one good sized piece of salmon (other fish could be substituted I suppose)
--several slices thinly sliced lime
--as much BASIL as you have or want and as many varieties as you have. (When I have it, I prefer some sweet basil, Mexican Cinnamon, Italian anise and African Blue!)
--2 chives
--1 garlic clove thinly sliced
--1 sprig rosemary
--splash of champagne (or any white wine)
--1-2 pats butter
--S&P to taste--fresh ground pepper is best!
optional:
--a few malabar tropical spinach leaves
-- sliced mushrooms
--a sprinkling of chopped nuts like pecans or walnuts
Take a piece of aluminum foil and lay the malabar and half the basil and lime and one pat of butter on it then the fish on top. Put the chives one each on either side as well as some garlic. Cover the fish with the rest of the basil (if you have basil flowers this is a great way to show them off), lime and mushroom slices and butter, then garnish with the nuts, sprinkle a splash of champagne and drink a splash while saying "Flores para los muertos" (Flowers for the dead, crucial symbolic line from the play.) Fold the foil around it like a loose envelope, tight on ends.
Bake at 350 degrees until flaky, approximately 10-20 minutes, depending on size of fish. Do not overcook! Serve with rice.
For dessert serve lemon ice or sherbet with fresh grown mint and a Dubonnet on ice and sing "It was very nice" ala Lou Reed.
Music: (recommended listening while cooking) Billie Holiday's "Do You Know What it Means to Miss New Orleans?" or browse my Store for New Orleans artists-- Harry Connick Jr. does a nice version of that song as does Dr. John or if you want something more lively try the Nevilles.

Mexican Cinnamon basil in bloom
Grow tips:
I grow many kinds of basil in pots in full sun on my balcony. It prefers temps above 50 degrees and thrives in heat. Snip flower buds as they form to assure continual growth. The flowers look pretty on this dish as a garnish. If you want to assure having plenty of basil for winter cooking, freeze the leaves in water in ice cube trays or small margarine tubs. You may also grow African Blue basil which is a tender perennial you may protect in mild areas with row covers or inside on a sunny window sill.
